Preheat oven to 325 degrees F.
Whisk together dry ingredients (through baking powder) in a medium mixing bowl.
Blend together strawberries and remaining wet ingredients (through coconut oil) untilsmooth.
Mix together wet and dry ingredients until combined.
Lightly spray wells of a muffin tin with cooking spray or line with cupcake liners.
Divide batter between prepared wells and bake for 20-30 minutes.
While cupcakes cool, mix together frosting ingredients until smooth.Spread frosting over cupcakes. For fancier cupcakes, use a piping bag or a sealedbaggie with one corner cut off for frosting.Enjoy immediately or store up to one week in the fridge.
